Mix everything well and set it aside.Bring a medium pot of water to a boil and add some salt.β£Add fresh spinach to the boiling water and cook for 10-20 seconds. Then remove from the boiling water and rinse it off with cold water. Squeeze out the water from the spinach gently and set it aside.β£Add the Korean potato glass noodles into the same pot boiling water and cook for about 5 minutes until the noodles are al dente. Then rinse with cold water and set the noodles aside.In a medium-hot pan, add a little bit of olive oil, pour the beaten eggs, and spread to make an omelet.
